If it's primarily the lag that bothers you and you rarely need the code completion, you
could configure an external editor. I like BareBone's TextWrangler for that purpose - it's essentially BBEdit without the HTML markup tools. Unlike BBEdit, it's free, and the HTML tools aren't really needed very often for Cocoa work anyway.
Project files are compatible, and Xcode 2.5 runs on Leopard, so if it **REALLY** bothers you, and you use 2.x's completion fairly often, you could edit in 2.5 and build in 3.0.
