Check out "Recursive Make Considered Harmful".  It's an old paper, but a good one (IMO).
 
A complication is that this requires that I keep all the build
products for each platform separate from each of the others.
Presently I have a folder called "Arch".  The various builds make
subfolders within Arch like "mac-os-x" and "win32-x86" and so on.
Eventually I'll have more folders like "linux/fedora-core",
"linux/ubuntu" and so on.

You might also want to check out Jam.  It's old but good, very customizable (for your multiplatform stuff), runs in parallel (good old -j) and very fast at doing dependency checking in deeply hierarchical trees.  It's got a steep learning curve but is a very powerful tool.
