It seems that there are no docs for OpenGL calls in Xocde, is that correct?

Correct.

Now why would there be?

XCode is a IDE for GCC

and has nothing to do with OpenGL or any other library.

Well, Xcode is a development environment for Mac OS X and iPhone development. A significant API on both platforms is Open GL. It has substantial documentation support for other Mac OS X APIs and iPhone APIs, as well as man pages for things like printf(). It seems perfectly reasonable that it would have documentation for OpenGL as well.
