So how do I trim the number of items in DOC SETS?
Use the contextual menu to reveal the doc set in the Finder, then
delete it from there. After which, you'll be able to hide the entry in
the window.

But this only hides subtopics. In some cases one might end up with
an entry that is obsolete, but can't be hidden. There is a
"Unsubscribe From Vendor" item, but this vendor provides a more
recent variant of the same entry. I definitely want to keep getting
updates from this vendor.
