Bound > Build Results, select a Compiling... step, and click the Show Transcript button (third button from the left in the horizontal scrollbar).  That shows the full and complete GCC invocation for each source compile operation.

The Build Setting inspector ought to be showing a path value (not $(inherited) for Search Paths, if you're using Xcode 3.0 or later; it's WYSIWYG.  

And if you really need to see where the compiler is looking, directory by directory, add -v to Other C Flags and the verbose compiler diagnostics will be given in the transcript.
