I've followed this discussion with interest since I'm a newbie at xcode and cocoa (and not real experienced with other systems for that matter -- hobbiest, not professional, although I took a fling at Microsoft Visual C++, and Visual Basic years ago. That was too expensive for a hobby!).
I really like Objective-C and IB; once I learned that delegates are your friends, as are outlets and actions, I started to be able to get around better. I had lots of trouble with things that suggestions here would have helped me with, but, sadly, I didn't ask the right questions to get this set of answers :-). Nor on this list.
In addition to the two books recommended, and the Apple documentation, I found the sequence of tutorials by Drew McCormack at macresearch.org very helpful. OK, specifically, look at
