Maybe it's been so long since my first use of Shark that I'm
misremembering, but I'm pretty sure that's the default behavior of
Shark. Certainly, that's the default I get now, but maybe I've set
something in my preferences.
When it comes up, you see the Config window, where you can select
which kind of analysis tool you'd like to use, and its scope. If you
choose a scope of "Process", you can elect to launch a process but you
can also select a running process. For what you want to do, just
select a running process.
Then, click the Start button or press the hot-key combination (Option-
Esc, by default) to start sampling, and click or press again to stop.
You can't quit pause and resume, but you can take multiple samples of
the same process. You do have to wait for processing of one set of
samples to complete before you start collecting another set.
