How to choose the number of cpu used in compilation

Hi all,
Sometimes, when I compiles very large files, xcode takes the whole CPU available in my computer and I have to wait it has finished to get my Mac usable.
I want to changed the number of cpu used by xcode when it is compiling.
In fact I want to set it to N - 1 where N is the number of CPU of my Mac. I would like to get 1 CPU to do something else when I compile my code.


Does anyone if it is possible?
