Thanks to all who answered.   A couple of messages stimulated my thinking,
and I've found what seems to be a simple approach.

Under targets, select the blue help folder, and press compile!  This is
simple enough for me, and is a lot better than "clean".  When I understand
Xcode better, probably this could be put into a script.  But I can do it by
hand easily enough for now.

Now a couple of answers to Ulf's questions:

1) I should have explained that the change in question was a simple wording
change in one of my html pages, not a page or folder name change.

2) I think this is clearly an Xcode question, not a help-authoring
question.

And by the way, I'm using 3.1.3 on OS X 10.5.7, but my active SDK is 10.4.
