No. (Yes, I read your post first :) )

First, there is no version of AppKit out there that is built for the
arm CPU. Even if you could copy the framework onto the device, it
would never run.
Second, even if you somehow got it to work in the Simulator, that
would mean nothing, as apps built for the Simulator are actually Mac
applications, that happen to link against Mac versions of the iPhone
frameworks.
