Thanks Greg, that's pretty much where I started but the documents
don't seem to match the 3.x interface (though they're labeled 3.1 in
the browser).
Maybe I have my Xcode preferences set wrong or something, but when I
do something as basic as 'New File' the panel that pops up doesn't
look like the docs. Like I say, it seems to be mostly a difference in
the UI because given enough time I can usually figure out how to do it
with 3.1.2, but not always.
I've decided to order 3rd party manuals but it would be nice if they
were provided with the tool.

I suggest starting with "Xcode Overview" on this page:
http://developer.apple.com/referencelibrary/DeveloperTools/idxXcode-date.html
Then look at the remaining guides for the individual areas of Xcode.
