When I choose Get Info for my application, the version number does not appear in the window that comes up. As an example, when I do the same for iMovie HD, it says

Version: 6.0.3, © Apple Computer, Inc., 1999-2006.

I expect this is some sort of internal string, possibly in InfoPList.strings or something.

Not quite -- just Info.plist.

I set three keys: CFBundleGetInfoString, CFBundleShortVersionString, CFBundleVersion. But I can't remember which are used by the default Cocoa About dialog, and which by Finder.

Check out the Cocoa Application Tutorial in the Dev docs.  There's a chapter in there about configuring your application and the Info.plist file.
