Can't change built-in toolbar item help tags in IB

I've created a nib file for a window, and I've installed a toolbar in the window. By default, the toolbar includes some built-in toolbar items, such a Color and Fonts. When I select one of these toolbar items and change its help tag in the Toolbar Item Identity inspector, it doesn't work. It looks like it will work, because IB lets me make the change, commit it, and save the nib file. However, when I run the interface simulator in IB or build and run my application, the old help tag appears. When I go back into IB, my edits are gone from the inspector.

What's going on? Is there any way to change the help tags in IB?

(Mac OS X 10.6.1 Snow Leopard.)
