While it's not a tutorial video I found this thread to be very useful
for xcode information http://stackoverflow.com/questions/146297/what-are-those-little-xcode-tips-tricks-you-wish-you-knew-about-2-years-ago

There don't seem to be very many Xcode tutorial videos out there
that aren't tied to iPhone or Cocoa development. I'd like to see one
(or more :-) aimed at getting people familiar with the Xcode way of
doing things. How projects are organized, how targets work, where to
go to change what settings, etc.
I'm coming in from a background of using mostly VisualStudio and
Eclipse (and good ol' make before that), working on an SDL-based
game project. I'm finding it hard to get productive with Xcode…
learning the "best" ways to navigate between header and source
files, learning where and how to set things up, and learning
Objective-C all at once is a steep climb.
I don't want to stir up an IDE war, I just want to get going so I
can concentrate on my code. Besides, every IDE is "special" in its
own frustrating ways. ;-)
Going to work through the Xcode Workflow Tutorial now and watch the
one "do X in Xcode vs. do X in VisualStudio" video I was able to find.
