I could have sworn there was a way to create Java projects/build

there any way to add this via plug-in?

Yes, Java Templates are no longer available via the new project assistant.
Alternatively, you can create Java Template projects from Xcode's Organizer window... (I tried to send a picture but my mail bounced back. so , no picture this time.)

- Bring up the Organizer, Click on the "+" pull down button in the Organizer window.
- Click "New From Template -> Java Templates -> <your choice of template>.
