But when using Visual C / Borland Builder / Eclipse / you_name_it you usually end up with too many tabs open at once, and then there is problem with finding the correct tab, so you train yourself to keep as few tabs open as possible.

This is similar to what you get with Xcode. For example, I use main window for main editing, so I can quickly switch between files from just making single click in project browser, and on the other hand if I need to have another source code open at the same time I just double click it.

Maybe it helps to note that there is option in Preferences->General->Layout where you can set it to All-In-One, which helps (at lest me) keep things organized on desktop.

After some time you just get used to how it works, and then when you look at primitive tabs in other IDE-s are using you understand what is this about ;)
