Code completion (and everything else connected with the matter of what classes and symbols your project contains) is severely broken in a simulator build. To get working code completion, switch to a device build. You don't actually have to run on a device if you don't want to; just develop in a device build in order to get code completion etc. You can still switch to a simulator build when it's time to test. m.
