Hi Matthew,
Try this:
1. Control-click on the menu item
2. The connections HUD will appear, make sure it open for the menu item and not the menu.
3. Click and drag from the circle on the right side of the row that says "selector" and connect to the First Responder
Is that working for you?
Also, are you control-dragging from a menu item (like "Open…", or a submenu item (like "Open Recent ->", one with the black triangle on the right). If the latter, those menu items do not have selectors and thus cannot be connected.
