To opt to load 64 bit, hold down the '6' and '4' keys when restarting. If you take a look in the software under About this Mac, by default it loads as 32. If you see the message:
64-bit Kernel and Extensions: No
you can restart in 64. The kexts as I understand aren't all 64 yet...not sure if all machiines boot this way.

My Snow Leopard machine reports EFI64. The Leopard machine (where I'm getting the dyld error) also reports EFI64.
