It's hard to speculate on what might be happening without specifics. In all such cases, the first step is to turn on the debugging log (in the debugging tab of the Xcode Preferences) and run as short a session as you can that reproduces the problem. Then file a bug with the log and a description of what point you were stopped when you didn't see variables, and which variables you didn't see.
If you can make this happen in a project you're willing to put in the Radar, or in some small sample project, that's even better.
