Right click on the parent folder and select Add > New Group.

This won't create a folder on the HD, but it will create a folder in the group tree.

I accidentally deleted my Classes folder for a project in xcode.  I was able to restore all the classes files but can't determine how to create a folder.

In the Resources folder, I was able to drag a folder titled "Images" in from Finder and put all my images there.  It won't work one level up for the Classes folder..
