mount accepts the option "-o nobrowse", which will keep it from appearing on the desktop.  However, if the user knows the path, he can still use Finder's "go to folder" to see the mounted volume.   You can create a directory in a hidden location and use that as a custom mount point, and you can use permissions to keep the user out.

mount_smbfs also has a nonotifications option, but I'm not sure what it does.  The man pages for mount and mount_smbfs have more detail.

Is this option sufficient?
