| Hold down the Control key when choosing New File (Control-Command-N). It turns into New Empty File and doesn't require a physical file.

Hmmm, I can't just open a window and paste. It seems I have to name and save the file before I can paste anything.
And that puts the wrong file name in the header on the paper. Sigh.
