Issue solved after re-installing the os and Xcode. I didn't find out the actual problem but I was advised to re-install by a colleague.
Now everything (xcode and IB etc) works just fine.

All I can say is that I have no issues running Xcode on an OS X Server.
That said, because essentially the OS X server is a build machine, only stable release versions of Xcode are installed there
