Please file bug reports with information about your project, your prefix headers, the libraries that you link to etc. CPU samples of Xcode during this time would also be helpful, as would the output from the top command line utility (top -l 2 > ~/Desktop/top.txt).
If you have access to seed builds of Mac OS X 10.7 & Xcode 4.1, you could also give that a try and see if the problem still exists there / has been fixed.

That doesn't sound right... Again, please file a bug report.

If you've only touched one single file, that's probably the expected amount.
