Oh....
You're referring to the 'Layout' option under 'General Preferences'.
You can also click on the left/right arrows within the thin toolbar above the workarea versus the cmd--opt-[left | right] to switch views.
.... never considered changing the layout.
... Still, it would be nice to have a 'pop history' option, like from a stack.
