You say Xcode names the destination "iOS Device." That's the case when it doesn't see a device that you have allowed to be used for development.
1. Is the device plugged in? Can iTunes see it?
2. Open the Device organizer and select the main entry for your device. If there's a button titled "Use this device for development," click it.
3. In the Scheme/Overview popup in the project toolbar, check to see if the device is available. If so, select it.
4. If not, make sure that the Deployment Target in your target's build settings is set to the same OS version (or earlier) as your device is running.
