Pls note that iOS Device is not a scheme. It's a destination. It's listed in the Scheme pop-up, but I've got a bug filed against that. :) Schemes and destinations are unrelated. Listing them together is a terrible mess, because if you've got five destinations (can easily happen) each scheme is repeated five times in the pop-up.
This is not a new behavior, by the way. I always found Xcode 3 totally unpredictable as to which SDK it would use each time a project was opened. m.
