... OK, now what? I command-option clicked it, there's now an extra
pane in my window that shows the header file for it, but the close
button on that pane is disabled.

This seems to be a bug. When you [option][command]-click, the Editor view switches from Standard to Assistant mode. I would expect Xcode to be smart enough to understand that you want to switch back to Standard mode, when you close the Assistant view. Maybe you want to file a bug for this issue?
