Xcode 3 could generate UIs based on Core Data models. Xcode 4 does not have that feature. The tutorial is obsolete, and it looks like you can't proceed with it without a large diversion into some additional Mac OS development skills.
That's bad. I've filed a documentation bug, and suggest you do so too; the link for doing so is at the bottom of the page.
You'll have to file from the web version of the document, <http://developer.apple.com/library/mac/#documentation/Cocoa/Conceptual/NSPersistentDocumentTutorial/02_CreatingProj/creatingProj.html#//apple_ref/doc/uid/TP40002830-SW1>, because the reporting forms are broken in the Xcode docset. As for those skill you'll need, you may have to find another tutorial. I'd recommend Aaron Hillegass's "Cocoa Programming for Mac OS X," but the newest edition will come out at the end of November, which is difficult for you.
