You can still install as many versions of Xcode as you like. However you cannot install Xcode 3.x on Lion, and when it's already installed it's not officially supported, though it may work or there may be problems.
I had both 3.2.6 and 4.1 installed on Lion (3.2.6 installed prior to updating to Lion), and while I could get most things done, if I deleted from the simulator an IOS program I was working on, all programs but the Finder no longer registered in the Dock or the quick switch (Alt-Tab) display.
Shortly thereafter, the machine would crash. I couldn't restart because somehow the process list included the apps, but the apps didn't respond to anything.
I un-installed 3.2.6 and 4.1, restarted, and reinstalled 4.1. I've had no problems since.
