I'd click on Xcode in the Activity Monitor when it's chewing away and click the Sample Process button.  You might be able to see a routine where it's spending all its time and possibly delete an offending UI element if it's that simple.

Of course, if happens after quitting and restarting Xcode, it seems like your Xcode install is borked or the file you are editing is.

Just my guesses.
