I've completely rebooted the iPad, but not the Mac.
Strangely enough, now that I've rebooted the Mac, it works again.
Since it didn't cause a problem to the iPod, I'm not completely convinced as to how or why this has fixed the problem, but I guess I don't have any ability to check any more symptoms so I suppose I need to chalk it up to "software is weird sometimes".
Sorry to waste the lists time.
