I neglected to add that I was deploying the app on an iPhone, rather than the simulator. Apple documentation states support for simulator only:
"…You can use this option both Mac OS X applications and also for iPhone applications running in the simulator."

Weird. Maybe your problem is not a missing libgmalloc but a stale/older one. I'd suggest running the 10.7.4 (sic) combo update.
