Hi Alex,
I've been mildly annoyed by the same problem. I pare down the Docsets and sometimes even the language and it makes it better.
Another thing that I do is search the documentation on the web using Google's "I'm Feeling Lucky" feature. If you use a popular browser other than Safari (maybe even Safari, but I've never figured out how), you can add a custom search engine in the settings. For example, in Chrome, I associate the letter "a" with Apple Documentation, and then use the following URL for the search:
http://www.google.com/search?btnI=I'm+Feeling+Lucky&ie=UTF-8&oe=UTF-8&q=%s+site:developer.apple.com
Then, if you type "a NSObject", it will take you to the NSObject Class Reference. I've done this for Opera and Firefox as well.
