For anything beyond the basics of source control, I use Atlassian’s  SourceTree app, which is a pretty comprehensive Git (and Mercurial) GUI. You can get it free from the App Store. If you’re doing anything beyond very basic checkins or diffs, I highly recommend it.

SourceTree also has easy integration with BlackPixel's gorgeous Kaleidoscope (http://blackpixel.com). Atlassian are also wonderfully responsive to bug reports etc.

JetBrains' AppCode also has comprehensive and thoughtful git integration (and its own very capable diff viewer). And, again, JetBrains are terrifically responsive to customers.

The dev tools situation for iOS / OS X development is looking better every day.
