No. Part of the updates blast device firmware, and are meant to fill gaps in hardware-level security. Apple isn't going to compromise on that.

No. Fifty-to-one, iOS 6 does not crater their app; their app craters on iOS 6. No matter how many downloads their app has had, they should fix it. And consider spending a few hundred dollars on a test device to test their work against prerelease system software. There's a reason it's called a simulator.
Even if it's a legitimate OS bug, that only gains them the right to be resentful while their users can't use their app. Developers have to deal with this sort of thing, because no OS is perfect. File a DTS incident if necessary. iOS 5 broke my app (confirmed by DTS), and our flailing hit upon a way around it. Fortunately, we caught it before iOS 5 came out, so we didn't have to tell our users not to keep their devices up-to-date.
