Except that Mail, and most if not all word processors, have a "Paste and Match Style" command which would do the exact same thing.

I agree that despite the fact it is most sensible for the destination application to be responsible for how pasteboard contents are handled within it, it would be useful for Xcode to have such a command to make it easier to interact with other applications that aren't sensible enough to provide smarter pasting options. But then the authors those those softwares should also be contacted about their glaring omission of such a simple function.
