Can't set font

I keep having this issue. I create a new, empty file in my project, call is something like "Notes.txt". Then I paste in some text from another file that had plain font settings. In this case, it was from a large comment block in a source file.

But the font it ends up using in the new file is not Menlo 11, but some proportional font. Using Edit->Format->Font doesn't change it, and the settings for "plain text", the type of file Xcode shows this to be, is Menlo 11, but it's clearly not that.

How can I get Xcode to behave?
