Question about codesigning

Does the code signing process sign the entire contents of the application package, or just the executable, or what? Obviously, it doesn't sign the signature, so that gets added to the bundle after the fact. But I'm curious what parts of the data it actually includes, and how it chooses an order for files if there is more than one.
