In gmail, you can add a filter

Has the words
list:"xcode-users.lists.apple.com"

and whatever you want with it (assign a label, move it trash or whatever)

In fact select any mail from the list in gmail and say filter messages like these and it will come up with this filter.

Desktop mail clients  should let you filter on the list-id header. (In mail.app you'll need to add the list-id header in the edit header list in the Add rules section first)
It is best done by a server side filter (like the one gmail lets you create.
