If you still have Xcode 4, how about using symbolic links to the older SDKs?
cd /Applications/Xcode.app/Contents/Developer/Platforms/MacOSX.platform/Developer/SDKs
ln -s /path/to/old/SDK .
I haven't tried this, but it used to work with older versions of Xcode.
