I wanted to make some changes to it using Xcode 5 but although I can see all the connections and actions from the toolbar items, I can't seem to bring it up to edit it. I feel like I must be missing something obvious, could anyone give me a pointer to how to do that please?

Try *double*-clicking the toolbar inside the window or clicking one of the toolbar items in the document outline. If the document outline is hidden, use the Editor > Show Document Outline menu item.
