Is there some setting I can flip to make Xcode see my project as "buildable" again, or do I need to punt and start over?

It’s not saying that your project is not buildable, it’s saying your scheme (“Schemata1”, apparently, though that could be some kind of internal label) is not buildable.

You can try looking at the scheme and see if there’s anything that looks wrong, or you can just try creating a new scheme and see if you can build if you select that. (Or perhaps you don’t really have a scheme selected. You can try re-selecting the scheme from the build target menu up in the toolbar.)
