In XCode however, the cursor has a black background around it regardless of the editor's background color which makes it very difficult to see.
I don’t use a black background, but I just switched to the ‘Midnight’ theme to check, and I see a fine white border on the left side of the I-beam only. This is different from the I-beam cursor in either Terminal or TextEdit, which has a white border all the way around, so I’m guessing that Xcode has a custom I-beam cursor. I agree that it’s pretty damn hard to see.
Does anyone know if there is a way to fix this behavior?
If it’s custom to Xcode, it’s probably stored in a PNG resource somewhere in the Xcode bundle. If you can find it you can edit it to whatever you like.
