You might have another .gitconfig file in a place that overrides the global one. I’d try poking around with the command line utility (use ‘xcrun git’ in Terminal to make sure you’re using the same version of git as Xcode) to see what values *it* reports, and whether it reports different values when run with the current directory being different project directories.
