Falling back to earlier Xcode releases is only problematic when the
project file format has also been revised _and_ you have permitted
Xcode to update the format of your projects.

This is less of a problem if you backup your project files and not
just your source (ie. check your .xcodeproj bundle into Git or
Subversion).

Revisions to the project file format are uncommon.

I have a project that builds ok in XCode 6.4, I copied the project file to the same name but with X7 at the end, e.g. myProjectX7.xcodeproj and opened in XCode 7, however, when I try to build, I find that Command+B doesn’t work and that if I look in the Product menu the Build Items are disabled.
