Thanks, that's what I feared. Then, I'm pretty sure 10.11 won't work neither and I'll have to install at least a 10.6 on a VM.
The other thing I'm not sure about is if I'll be able to use a recent certificate to install the compiled app on my iPhone... I guess I'll be alone is this journey back to the past.

Definitely not with Xcode 7 — I just looked in the target settings UI, and the “Deployment iOS Version” setting only goes down as far as iOS 6.
You’d have to download an older Xcode* to find one that supports iOS 3. Hopefully it will still run on OS X 10.11…
