What I do is keep a buildbot for each major OS/Xcode combination.  You could do this with virtual machines too.  So I have a 10.12+XC8.x bot, a 10.11+XC7.x bot, 10.10+XC6.x bot, etc.  Those bots periodically build and run tests, so you'll quickly find out any problems.

Apple doesn't care about old anything.  I'm amazed they still let you set older deployment targets. :(
