This is part of the newest, improved logging system. It has been improved to the point of being almost useless. But I’m sure it’s fast. Logging is done to memory. The log command is used to filter through the memory log and print -- assuming the items you are interested in are still in memory and logged at a suitable level.
I open a terminal window and run this:
log stream --predicate 'process == “<name of process I’m interested in>"' -debug
and pipe the output to a file. Or use the console app.
